Tofu Nut Burgers

 

Ingredients

  • 2 onions, finely chopped
  • 2-3 stalks celery, finely chopped
  • 400g tofu
  • 3 cups roasted nuts, any combination
  • 1 1/2 cups cooked rice
  • 2 tablespoons tomato puree
  • 3 tablespoons soy sauce
  • 2 teaspoons dill
  • 2 teaspoons oregano

Method

  1. Sauté the onion and celery.
  2. Mix together the remaining ingredients and form into patties.
  3. Bake at 150* C for 45 minutes.
  4. Serve with peanut sauce.

Peanut Sauce

  • 5 tablespoons crunchy peanut butter
  • 200ml coconut milk
  • 2 tablespoons soy sauce

Method

  1. Combine all ingredients and heat gently, stirring.
