Carroty Nut Loaf

Carroty Nut Loaf


2 cups salted peanuts (or other nuts like ground almonds)
1 1/2 cups wholemeal breadcrumbs (fresh)
2 cups finely grated carrot
1 teaspoon oregano
3 tablespoons oil
3 tablespoons fresh orange juice
1/2 cup of vegetable stock

  1. Grind the peanuts (or alternative nuts) to your taste in food processor or Magic Bullet.
  2. Mix with breadcrumbs, carrot and herbs. If mixture is too dry, add a little more water.
  3. Mix oil and orange juice together, and add vegetable stock liquid. Add to nut mixture.
  4. Mix well and place in a lined loaf tin and bake 180° for 30 minutes. Serve with gravy.
