One of my kitchen essentials is a big beautiful salad bowl. It’s so nice to mix your salad straight into it and the fewer dishes used the better.
Gather your ingredients.
Prepare the following:
1/2 cauliflower, cut into rough chunks
1/2 c raw cashew nuts
Pulse these in a mini food processor (shake the processor while it’s pulsing to help cut the ingredients evenly) until it resembles couscous (finely chopped but not a purée).
Add this mixture to your beautiful salad bowl, then add the following:
1/2 c sprouted chickpeas
1/4 red cabbage, finely sliced, then sliced in half again
1 stick celery or 4 sticks celery herb, thinly sliced
1 avocado, diced
juice of 1 lime
1 handful fresh mint and parsley, finely chopped
1/2 tsp salt and cracks of pepper
When everything is in the bowl, toss together well and serve.
