Christmas Pudding (Plum Duff)
Christmas Pudding - Plum Duff

Christmas pudding, wrapped in cloth.


3 cups mixed fruit
2 cups sultanas
1/2 cup chopped nuts
1/2 cup mixed peel
250g margarine
2 cups brown sugar
2 cups water

4 egg-equivalents
1/2 cup sherry
4 cups flour (gluten free works well)
2 teaspoons mixed spice
1 teaspoon salt
1 teaspoon nutmeg
1 teaspoon baking powder

  1. Bring the top 8 ingredients to the boil
  2. Mix in rest of ingredients - egg replacer, then sherry and lastly dry ingredients.
  3. Place in basin or cloth (cheese cloth or old tea towel - dip into boiling water, wring out, sprinkle with flour, pudding on top and tie up tight) on upside down saucer in a large pot of boiling water.
  4. Steam with lid on for 4 hours.
  5. Serve with Christmas dinner.
