Pear & Walnut Salad

Serves 3–4

Try this easy to make gluten free pear and walnut salad. Excellent source of Omega 3 and Vitamin C.

Ingredients

½ cup walnut pieces
1 pear
4 handfuls of rocket leaves
salt and pepper, to taste

Dressing / Sauce:

2 Tablespoons olive oil
2 Tablespoons wholegrain mustard
1 Tablespoon lemon juice
2 Tablespoons balsamic vinegar

  1. If not already in pieces chop the walnuts into smaller bits.
  2. Slice the pear finely (into about 2mm slices)
  3. Put pear, walnut and the washed rocket to the bowl.
  4. Mix the lemon juice, balsamic vinegar, mustard and olive oil together. Add salt and pepper to taste.
  5. Stir into the salad and serve immediately.
