Chocolate Raspberry Cake

Amazing cake by Sandi Wilson, our super talented graphic designer. We enjoy this great cake regularly in the office and share it with love with our neighbours. The filling & icing and decoration parts are optional. This is the kind of cake that you would love to make again and again.

Ingredients

Cake

  • 1 ½ cups flour
  • 1 Tsp baking powder
  • 1 Tsp baking soda
  • 1 Tsp salt
  • ¾ cup cocoa powder
  • 1 ½ cups plant-based milk
  • ½ cup rice bran oil
  • 1 ½ cups sugar
  • ½ cup raspberries (mashed, frozen, or fresh)
  • 2 Tsp vanilla extract
  • 1 cup whole raspberries (frozen or fresh)
  • ½ cup chocolate chips/pieces

Filling & Icing (optional)

  • 2/3 cup non-dairy butter/margarine
  • 2 ½ cups icing sugar
  • 1 ½ Tbs cocoa powder
  • ½ cup raspberries (mashed, frozen, or fresh)

Decorations (optional)

  • ¼ cup raspberries
  • 1/3 cup melted chocolate
  • Chopped almonds

    Directions

    1. Preheat the oven to 180°C. Grease 2 20cm cake pans.
    2. In a large bowl: mix oil, plant milk, sugar, ½ cup mashed raspberries, and vanilla extract, using an electric mixer.
    3. Sift into a bowl: flour, cocoa powder, salt, baking soda, and baking powder. Mix until blended, then fold in 1 cup of whole raspberries.
    4. Pour into prepared pans and bake for 20-25 minutes.
    5. Let cool completely on a wire rack.
    6. Combine icing ingredients (except raspberries) in a bowl and mix with an electric mixer. This is designed to be quite thick and fluffy, but if needed you can add a teaspoon or two of plant milk or water.
    7. Once cakes are cool turn one cake over onto your cake plate or stand. Spread with ½ cup mashed raspberries, then spread half the icing and place the other cake on top.
    8. Finally, decorate the top of the cake and this truly is the best part! It’s designed to be messy and delicious. Use a piping bag to pipe the remaining icing in small dollops around the top about 2cm from the edge, going into the centre.
    9. Add raspberries liberally, then drizzle with melted chocolate. You can be creative here and add chopped nuts, chocolate drops, shredded coconut, or edible flowers 😊
