Freedom Pâté

This vegan, cruelty-free Pâté is so simple to make, delicious, nutritious, and satisfying! We can assure you it will become your go-to dish when you have visitors or go on a picnic. There is so much flavour in so little list of ingredients. 

Ingredients

  • 1 cup dry green lentils
  • 150 gr roasted walnuts
  • 2 large onions
  • 2 Tbs Olive Oil
  • Black pepper, coarse, to taste
  • Salt to taste

Directions

  1. Soak the lentils for an hour in cold water, then cook them in water until soft, but not too soft, for about 15-20 minutes. Set aside to cool.
  2. Roast the walnuts in a dry pan until slightly burnt. Set aside to cool.
  3. Slice the onions and fry in olive oil in a pan until soft and gently caramelised. Add black pepper and salt.
  4. In a food processor, process the lentils without the water; add the walnuts and process; add the fried onions and process until you reach your desired texture. 
  5. Add black pepper and salt to taste and keep in an airtight container in the fridge. It will keep fresh for about five days.
