Tofu Tikka Masala Wraps
This tasty twist on a UK and (arguably) NZ-favourite curry is one you’re going to want to consider including in your regular meal rotation! With a tangy tomato sauce, yoghurt-marinated tofu, and quick-pickled red onion, this is one delectable and surprisingly easy meal!
Ingredients
For the tofu:
- 1 ½ Cups of Yoghurt
- 1 tsp Curry Powder
- 1 tsp Garam masala
- ½ tsp cumin
- ½ tsp turmeric
- ½ tsp salt
- ½ tsp cracked black pepper
- 2 Blocks of Firm tofu
For the pickled onions:
- 1 Red onion
- ¾ Cup White vinegar
- 2 tsp Salt
- ½ Tbs Brown sugar
- 1 tsp Dill seeds
- ½ tsp chili flakes (optional)
For the tomato sauce:
- 1 Tbs Olive oil
- 1 Brown Onion
- 3-4 Cloves of garlic
- 1 tsp Mustard seeds
- 1 tsp Turmeric
- 1 tsp Cumin
- 1 tsp Garam masala
- ½ tsp Salt
- 1 Can of Chopped tomatoes
- Wraps or pita bread
Directions
- In a large bowl, place the yoghurt, and spices.
- Cut the tofu into roughly 3cm cubes and cover in the yoghurt mixture. Place in the fridge for 30 minutes while preparing the other elements.
- Finely chop the red onion into thin strips and place in a bowl.
- In a pot, bring the vinegar to a boil and add the salt, sugar, dill seeds, and chilli flakes.
- After a minute or so, turn off the heat and pour the liquid over the onions.
- Leave to pickle while you complete the other elements.
- Finely dice the onion and garlic, and sautee on low with the olive oil under softened and just starting to caramelise.
- Bring the tofu out of the fridge and begin to heat in another pan on medium heat. You want to evaporate the water content in the yoghurt, so stir intermittently as it starts to heat up.
- Add the spices for the tomato sauce into the pan with the onions and garlic and toast for 30 seconds or so until fragrant.
- Finally add your can of tomatoes and simmer on medium heat until the sauce reduces.
- Once both the tomato sauce and the tofu are thickened and most of the water has boiled off, remove both pans from the heat.
- Take a wrap or pita, add some of the tomato sauce, top with the tofu and pickled onions, and enjoy!
