Turkish ‘Mince’ on Toast

Savoury pancakes

Using some unique flavours with a classic comfort dish, this is a great option for weeknight dinners when you don’t want something boring. Plus, many of these elements can be whipped up ahead of time, and then the TVP mince can be added to create a kind of ‘upgraded leftover’ type of dinner!

Ingredients

1 Tbs Olive oil

1 Onion

3-4 Cloves of garlic

1 Capsicum

½ tsp Salt

½ tsp Black pepper

¼ tsp Cumin

½ tsp Paprika

1 tsp Parsley

1 Can of Chopped tomatoes

2 Cups of TVP mince

2 Cups of Vegetable stock

Squeeze of lemon

1 Quantity of Sharon’s Hummus (see our other recipes), or store bought hummus

1 Loaf of Bread, sliced (good quality sourdough works well)

Toasted pumpkin seeds

Directions

  1. Finely dice the onion, garlic, and capsicum.
  2. Heat the olive oil in a pan and cook the onion until translucent, before adding the garlic and capsicum.
  3. Cook these until softened, before adding the salt, pepper, and all the spices. Toast these for around 30 seconds until fragrant.
  4. Add the TVP, the chopped tomatoes, and the vegetable stock, mix to combine, and simmer on a medium heat for 20 minutes, stirring intermittently.
  5. Once the liquid has reduced and the ‘mince’ has thickened, remove the pan from the heat, and add the lemon.
  6. Serve on good-quality toasted bread, smeared with hummus of your choice, a few good spoonfuls of the ‘mince’ and a sprinkling of toasted seeds (pumpkin, sunflower, or sesame seeds work well).
