Mexican Mole Jackfruit
This versatile recipe can be made with pulled wheat meat, plant-based mince, jackfruit or lentils or a mixture, and is perfect for filling soft tacos.

Ingredients
- 1 red onion, diced
- 1/2 red capsicum, deseeded and finely chopped
- 2 cloves garlic, crushed
- 2 Tbs cumin
- 1 Tbs coriander
- 1/4 Cup extra virgin olive oil
- 300g pulled wheat meat, plant-based mince or cooked lentils
- 400g Can jackfruit, drained and squished
- 2 Tbs smoked paprika
- 400ml tomato passata
- 100ml water or broth from the wheat meat
- 2 chipotle peppers in the adobo sauce (optional)
- 1 Tbs raw cacao powder
- 1 Tbs molasses or agave syrup
- 1 Tbs coconut sugar (optional)
- 1 Tbs dried or fresh oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- Juice of 1 lime
Directions
- Gather your ingredients, prepare the vegetables, toast and grind the spices in a dry pan. Heat the olive oil in a pan on a high heat and add the onion and capsicum, fry for two minutes then add the garlic, spices, your choice of protein, jackfruit, paprika, water, chipotle peppers, cacao powder, molasses, coconut sugar, oregano, salt and pepper. Cook for 10 minutes, remove from the heat and finish with lime juice.
