Mexican Pepitas
Toasted pumpkin seeds are not only tasty, but they add a nice crunch to the meal too. They are nutrient rich, high in protein and dietary fibre, so scatter them liberally over your meal and enjoy.

Ingredients
- 1 cup pumpkin seeds
- 1 tsp cumin seeds, toasted then crushed or ground
- 1 tsp cinnamon powder
- 1 tsp smoked sweet paprika
- 1 tsp olive oil
- 1 tsp maple syrup
- 1 tsp salt
- 1/4 tsp cracked black pepper
Directions
- Gather your ingredients and preheat your oven to 160°C.
- Measure all the ingredients into a roasting tray, mix together to coat the seeds and bake for 10 minutes, stirring half way through.
- Cool and store in a jar if there are any left!
